It is finally fall πππ That means cooler weather, lattes, leggings, and BAKING π Here is my recipe for snickerdoodle cookies sandwiched together with cream cheese frosting. The cinnamon in these cookies is perfect for all the fall feels. These cookies are amazing by themselves and even better with cream cheese frosting. Here is my recipe!
Ingredients
-1 1/4 Cups Crisco -3 Cups Sugar -1 Cup Brown Sugar -5 Cups Flour -4 Eggs -1 Tsp Salt -2 Tsps Baking Powder -2 Tbs Cinnamon
1) Combine the Crisco and 2 Cups of Sugar in a metal mixing bowl and use the electric mixer to cream them together to look like this. I mix on high for about 2 minutes.
2) Turn the mixer off and add 1 Tbs Cinnamon, 1 Tsp Salt and 2 Tsps Baking Powder. Then mix this on medium speed to combine. Mix for a total of 2 minutes.
3) If the ingredients start to stick to the side of the bowl, turn the mixer off and use a spatula to scrape everything back to the middle.
4) Then continue to mix on medium until everything is combined.
5) Start to slowly add the 5 cups of flour. I add small amounts at a time so that it can mix well without making a mess. I mix this on medium speed until all the flour is added.
6) Add the eggs one at a time. I do this when the mixer is off so that I can pull out any egg shells that may fall in before they get mixed in the dough π¬
7) Once all the eggs are in the batter, mix on medium speed for about 2 minutes. I stop after the first minute to use a spatula around the edge of the bowl again to get everything off and ensure it gets mixed well.
8) After everything has mixed for 2 minutes it should look like this. And you can go ahead and take the bowl off the mixer!
9) I use a spatula to make the dough into a ball in the middle of the bowl to make it more manageable later when we pull off bits to make cookie dough balls before baking.
10) Put the dough in the fridge to chill for about an hour.
11) Combine 1 Cup White Sugar, 1 Cup Brown Sugar, and 1 Tbs cinnamon into a pyrex bowl.
12) Get out a cookie tray and place a layer of parchment paper over it to prevent the cookies from sticking.
13) Preheat the oven to 400 degrees.
14) Now it is time to form the cookies! After the dough is done chilling, grab a small piece of dough and roll it into a ball. Try to make these uniform in size, I usually make them about 1 inch in diameter.
15) Before placing the dough ball on the cookie sheet, roll it in the bowl of Cinnamon Sugar mix. Then place it on the cookie sheet. I make 4 rows of 4 cookies.
16) Bake at 400 Degrees for 6-8 minutes
17) Once they come out of the oven, use a spoon to gently press the tops of the cookies to make them flatter.
18) Let the cookies cool until they are room temperature.
For The Frosting
1) Using the electric mixer, add the cream cheese and melted butter and mix on a slow speed until combined.
2) Add small amounts of powdered sugar at a time using the big metal spoon.
3) Turn the speed to high and allow to mix for 2 minutes until it looks light and fluffy.
4) Then it is time to first the cookies! I frost one cookie and then sandwich another on top.
